Itsuroku Kimura
Mr. Kimura arrived in the US in 1979. He opened first his restaurant Samurai Sushi in Santa Monica. Over the
years he has travelled the world working and/or owning various restaurant. Here is a short list of some of his

Mr. Kimura has been cooking for over 40 years. His cooking style is traditional Japanese cooking mixed with new age techniques. Mr. Kimura is avid patron of
jazz music and likes to go fishing during his free time.
Katsuhiko Terada
Mr. Tareda arrived in the US in the 1980's and opened his restaurant called Terried Sake House. After 25 years,
he sold his restaurant and moved to Vancouver to help his friend at Sushi Kimura. Mr. Tareda has been cooking for
over 40 years and specializes in Yakitori.
Takuya Nishina
Mr. Nishina has been cooking in various countries for the last 10 years. He has worked in Japan, Australia and Canada.
